Tropical Salsa Burrito Breakfast

1/2 cup/125 mL green pepper, diced
1/4 cup/60 mL onion, diced
4 strips bacon, fried and crumbled
8 beaten eggs
Watkins Omelet & Soufflé Seasoning
4 warmed flour tortillas
Watkins Tropical Salsa
Shredded cheddar cheese

In medium skillet, sauté first two ingredients; add bacon. Pour eggs
into skillet and cook until set. Sprinkle with Omelet & Soufflé
Seasoning. Fill each warmed flour tortilla with egg mixture. Top with
desired amount of Tropical Salsa and cheese, roll up and place in
baking dish. Heat in oven or microwave until cheese melts.

Crabby Onion Cups


1/2 cup/125 mL (1 stick) butter, softened
2 tbsp/30 mL Watkins Onion Soup Base
1/2 tsp/2.5 mL Watkins Lemon Pepper
1 1/3 cups/325 mL all-purpose flour
2 cups/500 mL (8 oz/227 g) shredded sharp cheddar cheese, room temperature

Blend butter, soup base and lemon pepper thoroughly. Stir in flour and cheese, knead until well-mixed. On a floured surface, roll out dough use a round cookie cutter and cut rounds. Spray muffin tin with Watkins Cooking Spray and place cut rounds in a muffin tin and press to create cups. Bake for 8 — 10 minutes in a preheated 350ºF/180ºC oven.

Filling
1 package (8 oz/227 g) cream cheese, softened
3 tbsp/45 mL Watkins Crab Snack & Dip Seasoning Mix
2 tsp/10 mL Watkins Organic Garlic Powder
1/2 cup/2.5 mL finely chopped bacon, prepared
1/2 cup/2.5 mL Watkins Minced Green Onion
8 oz/227 g imitation crabmeat, chopped

Combine cream cheese, snack & dip mix, and garlic powder. Add bacon, onion and crabmeat. Fill cooled onion cups with crab mixture.

Pumpkin and Apple "Dump" Bread

• 1/2 cup/125 mL vegetable oil
• 2 cups/500 mL white sugar
• 1-1/2 cups/375 mL canned or cooked pumpkin
• 1/2 cup/125 mL water
• 3 eggs
• 2-1/2 cups/625 mL all-purpose flour
• 1 tbsp/15 mL Watkins Baking Powder
• 1-1/4 tsp/6.2 mL Watkins Cinnamon
• 1 tsp/5 mL Watkins Apple Bake Seasoning
• 3/4 tsp/3.75 mL Watkins Nutmeg
• 1/2 tsp/2.5 mL baking soda
• 1/2 tsp/2.5 mL salt
• 4 oz/125 ml reduced-calorie or regular cream cheese, softened
• 1/2 tsp/2.5 mL Watkins Vanilla
• 1/2 tsp/2.5 mL Watkins Rum Extract
• 1/4 tsp/1.2 mL Watkins Vanilla Nut Extract
• 1/4 tsp/1.2 mL Watkins Butter Pecan Extract

"Dump" together all of the above ingredients in a large bowl. Beat until well mixed. Add to batter:

• 3/4 cup/180 mL chopped apple (steamed then cooled)
• 1 cup/250 mL chopped walnuts

Mix well. Pour batter into 2 large 9x5-inch/22.5x12.5-cm greased and floured loaf pans. Bake at 350 F/180 C for 1 hour or until done.

Pasta with Roasted Garden Vegetables

· 3 bell peppers (red, yellow or green), quartered, seeded and cut into 1/2-inch/1-cm strips

· 2 red onions, cut into 1/2-inch/1-cm chunks

· 2 yellow or zucchini squash, halved lengthwise and cut into 1/2-inch/1-cm slices

· 1/3 cup/80 ml Watkins Garlic-Parsley Grapeseed Oil

· 2 tsp/10 mL Watkins Italian Seasoning

· 1/2 tsp/2.5 ml Watkins Thyme

· Salt and Watkins Black Pepper, to taste

· 12 oz/340 g bow tie, penne pasta, etc cooked per package directions

· 2 tbsp/30 ml Parmesan cheese

Preheat oven to 400 F/205 C. Spread vegetables in large roasting pan, add Grapeseed Oil; toss to coat. Bake, turning often, until crisp-tender, 20 to 25 minutes. Add Italian Seasoning, Thyme, salt and Pepper.

Ladle out 1/2 cup/125 ml of the pasta cooking water and reserve; drain pasta. In serving bowl, toss pasta with half the vegetables, cooking liquid and cheese. Spoon remaining vegetables on top. If desired, pass with additional Parmesan cheese.


Frozen Rice Pudding

• 1/2 cup raw rice
• 3/4 cup/180 ml sugar
• 1/2 tsp/2.5 ml salt
• 1/4 tsp/1.2 ml Watkins Nutmeg
• 4 cups/1 L milk
• 3 eggs, beaten
• 1 tbsp/30 ml Watkins Vanilla
• 1 cup/250 ml whipping cream

Wash rice thoroughly and cook in boiling water for 5 minutes, then drain. Stir in sugar, salt and Watkins Nutmeg; add milk. Cook about 40 minutes, or until tender, in top of double boiler. Add beaten eggs and cook 5 minutes longer. Cool. Add Watkins Vanilla and fold in whipped cream. Turn into refrigerator tray and freeze with temperature control set at lowest point.

Cherry Dessert Salad

· 2 cups/500 ml drained black cherries or fresh cherries

· 1 3-oz/100 g package of cream cheese

· 2 tbsp/30 ml cream

· 1/2 cup/125 ml walnut meats

· 6 slices drained canned pineapple

· 6 canned (or fresh) peach or apricot halves

· Cream mayonnaise (see below)

· Watkins Paprika

Pit cherries and chill. Blend cheese, cream, nuts and salt to suit taste. Fill cherries with mixture. Arranged pineapple slices on crisp lettuce, place apricot/peach halves in center and arrange cherries around fruit. Serve with cream mayonnaise and a dash of Watkins Paprika.

Cream Mayonnaise for Fruit Salads

Blend and whip together 2 parts mayonnaise and 1 part whipped cream. Or follow your favourite recipe for mayonnaise and add 1/4 cup of thick sour cream and blend thoroughly.

Spicy Fried Potatoes


1 to 1 1/2 pounds new potatoes, scrubbed
but not peeled
2 tbsp Watkins Sea Salt
1/4 cup Watkins Original Grapeseed Oil
4 large garlic cloves
pinch of Watkins Chili Powder
1 to 2 tsp Watkins Paprika


Put as many potatoes in a wide saucepan as will fit tightly in a single layer. Cover with cold water, add salt and bring to a boil. Cover with and cook for 20 to 25 minutes until done but not breaking up. Drain and peel or not as you wish, then cut into slices.

Heat the grapeseed oil in a skillet. Bruise the whole garlic cloves by pressing on them with the flat of a knife and add to the pan. When the garlic browns, discard it.

Add potato slices over medium-high heat. When they start to color around the edges, sprinkle with the paprika and chili powder, and turn in the pan for a couple of minutes more.

Cinnamon Squash Rings


2 tbsp packed brown sugar
2 tbsp milk
1 egg
3/4 cup soft bread crumbs
1/4 cup yellow or white cornmeal
2 tsp Watkins Cinnamon
1 large acorn squash, cut crosswise
into 1/2-inch slices and seeded
1/3 cup butter, melted


Preheat oven to 400*F.

Mix brown sugar, milk and egg. Mix bread crumbs, cornmeal and cinnamon. Dip squash slices into egg mixture, then coat with bread crumb mixture; repeat once more. Place squash slices in an un-greased 13 x 9-inch baking pan. Drizzle with butter. Bake uncovered until squash is tender, about 35 minutes.

Strawberry Refresher


1 Pint Strawberries
1 Can (6oz) Lemonade Concentrate
1 tsp Watkins Banana Extract
1/2 tsp Watkins Orange Extract

In a blender, combine all ingredients. Add 3 cups ice cubes; blend until smooth.

Rum Raisin French Toast

4 Slices Raisin Bread
2 Eggs
1/4 Cup Milk
1 tbsp Watkins Rum Extract
1 tbsp Butter

Generous sprinklings of Watkins Nutmeg and Watkins Cooking Spray


Add 1 tablespoon (or slightly more) Butter In a large bowl, beat the eggs vigorously. Whisk in the milk, rum extract, and the nutmeg. Place all four pieces of bread in the egg mixture and let them soak for about 5 minutes. Spray nonstick skillet with Watkins Cooking Spray and add some butter for frying. When it is very hot (but not smoking), place the pieces of soaked bread on it and fry until golden brown. Flip them and repeat on the other side. Serve with maple syrup.

Watkins Hazelnut Truffles

6 oz semi-sweet chocolate
4 oz cream cheese
1 1/2 cups powdered sugar
1/2 tsp WATKINS Double Strength Vanilla Extract
1 tsp WATKINS Hazelnut Extract (or WATKINS extract of your choice)

WATKINS Baking Cocoa, Powdered Sugar, Chocolate, Nuts for decoration.

Melt chocolate in microwave on high for 60 seconds. Stir and continue cooking on high for another 30 seconds or until completely melted. Beat cream cheese until smooth. Add powdered sugar and continue beating until well-blended. Stir in chocolate, vanilla and extracts. Refrigerate for 2 hours or until firm. Shape into 1-inch balls. Roll in cocoa, sugar, nut, etc or dip in melted chocolate.
Store in refrigerator. Makes 3 dozen truffles.

Six-Onion Mashed Potatoes


4 to 5 lbs potatoes
8 oz cream cheese
1 cup sour cream
6 tbsp WATKINS Six-Onion Soup Base
1/4 tsp WATKINS Onion & Garlic Pepper

Cook Potatoes. Mash with cream cheese and sour cream. Add soup base and seasoned pepper. These can be made and refrigerated a day ahead of time and heated in oven, microwave or crockpot before serving.

Watkins Burgers


1 lb ground beef
3 Tbl. WATKINS Meat Magic
2 Tsp. WATKINS Ground Beef Seasoning
1/3 C. Instant Potato Flakes

Mix all ingredients together and form into patties. Cook on the stove or grill til done.

Meat Magic is Magical!

I just wanted to share with you all a story about my friend and I cooking a roast. So last week my friend I were shopping and we both picked up a roast (it was on sale...very good price). She cooked hers in the slow cooker soon after she bought it, I just cooked mine today. Well she called me after she cooked it and were chatting and I asked her how the roast turned out. She said “it was ok but it was not very tender and it shrank a lot, so watch out for that.” I said “I use my Watkins Meat Magic so I don't think that will happen.” She said “I can't see that making that much of a difference". So I told her I will cook it on Sunday, why not come over and we can do some card making while it is cooking. So she came over, she watched as I prepared the roast with the Meat Magic and rubbed some onion soup mix on the roast. When it was done, she was shocked. She said “my roast was half the size of that, yours hardly shrank at all! I let it cool and then cut it up in pieces. She tried it, she couldn't believe how tender and flavorful it was. She ended up ordering 2 bottles and a container of onion soup mix.
