NEW YORK (Reuters Health) - People with diabetes can help
keep their bodies healthy by simply adding a dash of spice to
their diet, new research reports.

In a study, diabetics who incorporated one gram -- equivalent
to less than one-quarter teaspoon -- of cinnamon per day for 40
days into their normal diets experienced a decrease in levels of
blood sugar, cholesterol and blood fats.

And for people with diabetes, the less of those substances in the
body, the better.

Type 2 diabetes arises when the body loses sensitivity to insulin,
a hormone that shuttles the sugars from food into body cells to be
used for energy. As a result, the amount of sugar, or glucose, in the
blood remains high, leading to fatigue and blurred vision. Over the
long term, excess blood glucose can increase the risk of heart disease,
kidney failure and blindness.

The current findings suggest that a small amount of cinnamon can help
protect diabetics from these and other potential complications of their
condition, study author Dr. Richard A. Anderson of the Beltsville Human
Nutrition Research Center in Maryland told Reuters Health.

Diabetics could add a dash of cinnamon to their morning servings of
coffee, orange juice or cereal, Anderson noted. "You can also make a
cinnamon tea by simply boiling water with stick cinnamon,
" he suggested.

Anderson noted that cinnamon may also help stave off the onset of
type 2 diabetes in people at risk of the condition.

During the study, Anderson and his colleagues asked 60 people with
type 2 diabetes to consume 1, 3, or 6 grams of cinnamon each day for
40 days, or the equivalent amount of wheat flour, as a placebo.

Reporting in the journal Diabetes Care, Anderson and his team
found that all cinnamon-takers experienced a drop in blood levels of
glucose, fats and cholesterol by up to 30 percent. No change was seen in
the people taking placebo.

Anderson explained that cinnamon contains compounds that help make
insulin more efficient, improving the hormone's ability to bring glucose
to the cells that need it.

As an added bonus, cinnamon contains virtually no calories, Anderson
said, allowing diabetics to add zest to their meals without adding to
their waistlines.

Previous research has shown that cinnamon appears to help fat cells
recognize and respond to insulin. In recent studies, the spice increased
glucose metabolism by about 20 times.

Freshen up the fridge
Having trouble getting rid of that bad odor in your refrigerator, even after scrubbing it out? Wipe down the inside of the fridge with vanilla extract. To prolong the fresh vanilla scent, soak a cotton ball or a piece of sponge with vanilla extract and leave it in the refrigerator.


Deodorize your microwave
Is the odor of fish, or some other strong smell, lingering in your microwave? Pour a little vanilla extract in a bowl and microwave on High for one minute. Now, that's better.


Neutralize the smell of fresh paint
If you would rather not have the unpleasant smell of fresh paint in your house, mix 1 tablespoon vanilla extract into the paint can when you open it. The house will smell delicious!


Sweeten the smell of your home
It's an old Realtor's trick. Put a drop or two of vanilla extract on a lightbulb, turn on the light, and your house will be filled with the appealing scent of baked goods in the oven.

  • Spread some ground cinnamon where you think the ants are coming in to the house.
  • Use half vanilla (has to be pure vanilla) and half water and for a mosquito and tick repellent.

Microwave Fudge



1 can (10 oz./285 g) sweetened condensed milk
½ cup/125 mL butter or margarine
2 cups/500 mL sugar
1 tsp/15 mL Watkins Vanilla
½ tsp/12.5 mL Watkins Extract of choice (Danish Pastry, Caramel, Butter Nut, Vanilla Nut, Peanut Butter, etc.)


Put condensed milk, butter and sugar in a 3 - 4 quart/3 - 4 liter microwaveable glass bowl. Cook on high for 5 minutes. The butter will melt and the whole mixture will start to bubble. Remove from the microwave and mix well.
Return to microwave and cook on HIGH for 3 more minutes. Remove and mix again. It is still very bubbly and very hot.
Return to the microwave for 2 - 4 more minutes on HIGH, checking the fudge every 30 seconds. As soon as it turns golden brown, it is finished. Remove it and add vanilla and other extracts, mixing well.
Pour fudge immediately into a well-greased or sprayed square 9-inch/23-cm pan. For easier removal, it is a good idea to line the pan with foil and spray or grease the foil before adding the fudge. Allow to cool and cut or break into pieces.
Tip: When almost cool, score fudge with a knife, making 36 pieces. When completely cool, turn out of the pan and break apart along scored lines.

Variation-Chocolate Fudge: Add 1/4 cup Watkins Baking Cocoa to sugar in step 1. For step 3, remove fudge from microwave after 2 minutes. Add 1/2 tsp Watkins Chocolate Extract in step 3. Caution: Chocolate fudge bubbles higher.

Mint Cream Cheese Brownies

Ingredients
1 cup/240 mL sugar
2/3 cup/160 mL Watkins Baking Cocoa
1/3 cup all-purpose flour
1/2 tsp/2.5 mL Watkins Baking Powder
4 egg whites, lightly beaten
1/4 cup/60 mL Watkins Original Grapeseed Oil
1 tsp/5 mL Watkins Original Double-Strength Vanilla (11 oz)
1/2 tsp/2.5 mL Watkins Peppermint Extract
Cooking Spray
6 oz/170 g nonfat cream cheese
3 tbsp/45 mL sugar
1 tbsp/15 mL all-purpose flour
1 egg white
1/2 tsp/2.5 mL Watkins Original Double-Strength Vanilla (11 oz)
1/4 tsp/1.2 mL Watkins Peppermint Extract

Cooking Directions
Combine first 4 ingredients in a large mixing bowl; stir well. Combine 4 egg whites and next 3 ingredients in a small bowl; add to dry ingredients, stirring well. Spread batter in an 8-inch/20-cm square pan coated with cooking spray.

Combine cream cheese and remaining ingredients in a medium bowl. Beat at low speed of an electric mixer until smooth. Spoon cream cheese mixture by tablespoonfuls over cocoa mixture. Cut through cream cheese and cocoa mixtures with a knife to create a marbled effect. Bake at 350°F/180°C for 22 minutes or until wooden pick inserted in center comes out almost clean. Let cool in pan on a wire rack. Cut into bars. Makes 12 brownies.


Chocolate Hazelnut Mousse

1 Watkins Chocolate Dessert Mix pudding recipe
2 cups/500 mL whipped cream
1 1/2 tsp/7.5 mL Watkins Hazelnut Extract

Prepare pudding recipe according to package directions. Cool slightly and whisk 1/2 tsp/2.5 mL of Hazelnut Extract into the pudding. Cover the top of the pudding with plastic wrap and let cool to room temperature. In a separate bowl, combine 2 cups/500 mL of whipped cream with 1 tsp/5 mL of Hazelnut Extract. Beat this mixture in a chilled bowl until it begins to thicken. Fold the whipped cream into pudding and spoon the mousse into desired serving dishes. Refrigerate until ready to serve.

    1 cup/250 mL reduced-calorie mayonnaise

    2 tbsp/30 mL sweet pickle relish

    desired consistency; mix well. Serve over lettuce, as a dip
    for vegetables, or as a sauce for hamburgers.

    Cafe Vienna Coffee Mix Recipe

    1 1/3 cups granulated sugar
    1 cup instant coffee
    1 1/3 cups nonfat dry milk
    1 teaspoon WATKINS cinnamon

    For Sugar Twin, use 10 teaspoons for 1 cup of sugar.

    * You can also use decaffeinated instant coffee.

    Put all ingredients into a blender or food processor; blend until powder consistency. Put mixture into an attractive glass jar with a lid. To give as a gift, include a gift card with the following instruction:

    To make Cafe Vienna Coffee: In a mug, combine 2 tablespoons of mix with 6 ounces of boiling water.

    Cappuccino Mix in a Jar recipe

    Makes two 12-ounce jars.

    1 cup powdered non-dairy creamer
    1 cup powdered chocolate drink mix
    2/3 cup instant coffee granules
    1/2 cup granulated sugar
    3/4 teaspoon ground WATKINS cinnamon
    3/8 teaspoon ground WATKINS nutmeg

    Have ready 2 (12-ounce) canning jars. Put the instant coffee into a food processor, and process to a fine powder. If you don't have a food processor, put it into a large plastic bag, and crush with a rolling pin.

    In a large bowl, combine creamer, chocolate mix, instant coffee, sugar, cinnamon, and nutmeg. Stir together until well mixed. Spoon into the jars.

    Attach a note to each jar:

    Cappuccino:

    Mix 3 tablespoons of powder with 6 fluid ounces hot water.

    Makes 16 servings.


    Cinnamon Coffee Cocoa Mix in a Jar Recipe

    2 cups granulated sugar
    1 1/2 cups instant coffee
    1 cup nondairy powdered creamer
    1/2 cup cocoa powder
    1/2 teaspoon WATKINS ground cinnamon

    Combine all the ingredients and pour into an airtight jar.

Place mix in a bowl and stir in almonds. Store in refrigerator in an airtight container. To Serve: Place the entire amount of mix into filter of an automatic drip coffee maker; add 6 cups water and brew.

    Chocolate-Mint Coffee
    Makes 6 to 8 servings

    1/3 C ground coffee
    1 tsp.
    WATKINS chocolate extract
    1/2 tsp.
    WATKINS mint extract
    1/4 tsp.
    WATKINS vanilla extract

    Ingredients
    8 oz/227 g cream cheese

    1/4 cup/60 mL sour cream

    4 tbsp/60 mL Crab Snack & Dip Seasoning

    1/4 cup/60 mL crabmeat or imitation crab



    Directions
    Whip cream cheese until softened. Fold in sour cream, seasoning and crab. Let stand for 30 to 60 minutes to allow flavors to develop. Serve on melba toast or assorted crackers.

    Pineapple-Pepper Salsa

    Pineapple-Pepper Salsa











    Ingredients
    1 can (20 oz/567 g) pineapple, crushed or tidbits, in juice

    1 red bell pepper, chopped

    1 green bell pepper, chopped

    5 green onions, sliced

    2 tsp/10 mL Salsa Seasoning

    2 tsp/10 mL Cilantro

    2 tsp/10 mL

    Juice of 1 lime

    Freshly-ground Sea Salt , to taste

    Directions
    Drain pineapple. Add remaining ingredients; refrigerate at least 30 minutes to allow flavors to develop.

    Salsa Sour Cream Bacon Bundles

    Salsa Sour Cream Bacon Bundles











    Ingredients
    1 cup/250 mL sour cream

    3 tbsp/45 mL Salsa & Sour Cream Snack & Dip Seasoning

    8 slices bread (white or pumpernickel)

    8 slices center cut bacon (not thick cut)

    1/4 cup/60mL sliced green onions

    1/4 cup/60mL diced red bell pepper

    Directions
    Mix sour cream and Snack & Dip Seasoning and refrigerate at least one hour to enhance flavor. Trim crust off of bread, keeping the bread a square shape. Combine green onions and red pepper with dip mixture and spread on bread. Bring together two opposite corners of the bread and wrap bacon around middle, securing the bundle with a toothpick. Bake at 425°F/220°C for 6 to 8 minutes or until bread is toasted and bacon begins to crisp.

    General History of Watkins Products



    Watkins was founded in 1868. That’s 139 years ago. In 1868,
    the Civil War had just ended and was a recent memory to everyone
    at the time. Andrew Johnson was President of the United
    States taking over from Abraham Lincoln who was recently
    assassinated. A few things that did not exist yet
    include the telephone, the light bulb, airplanes, and the
    Suez and Panama Canals. There were just 37 states in the
    union and they were all in the same time zone since there
    was only one time zone. General George Custer and
    Geronimo were still alive and well. And J.R. Watkins was
    living in Plainview, Minnesota and had a dream, a recipe,
    and a kitchen where he created Watkins Red Liniment.
    His Watkins Red Liniment launched a company that has
    created careers for hundreds of thousands of Watkins men
    and women over the years. In 1869, J.R. Watkins established
    America’s first Money-Back Guarantee. He put a
    Trial-Mark on the Liniment Bottles and told customers
    that they could use the product down to that line and if
    they didn’t like it, he’d give them their money back. By
    1915 Watkins was the largest direct selling company in
    the world and had the majority of the spice and extract
    market for decades.

    Do you remember how wonderful your Grandmother’s
    cooking was? And your Great Grandmother’s cooking
    also? The traditional home-cooked meal by our ancestors
    were almost always cooked with Watkins Products, almost
    exclusively. That, and a pinch of love is what made
    those old-time traditional home-cooked meals so delicious

    Three-Flavor Fudge


    Watkins is known for quality flavorings and extracts.     1 box (1 lb/454 g) powdered sugar
    2 eggs
    1 cup/240 mL (2 sticks) butter
    1 package (12 oz/340 g) chocolate chips
    1 tsp/5 mL Watkins Almond Extract
    1 tsp/5 mL Watkins Coconut Extract
    1 tsp/5 mL Watkins Vanilla
    1/2 cup/125 mL chopped walnuts (optional)
    In mixer bowl, combine sugar and eggs; mix until satiny. In small saucepan, melt butter and chocolate chips; mix well. Add chocolate mixture to sugar and eggs; blend. Mix in extracts. Stir in nuts, if desired. Pour into an 8 x 8-inch/20 x 20 cm buttered pan. Chill in refrigerator before serving.

    Chocolate Mousse

    1 pudding recipe Watkins Chocolate Dessert Mix
    2 cups/500 mL frozen whipped topping, thawed
    Additional whipped topping, chocolate cookie
    crumbs or chocolate curls for garnish
    Prepare pudding according to package directions,
    cover top of pudding with plastic wrap and let
    cool to room temperature. Stir pudding and fold
    in whipped topping. Spoon into dessert dishes
    and refrigerate until serving time. Before serving,
    garnish with whipped topping and cookie crumbs.

    Watkins Dessert Mix Frosting

    2 cups/500 mL powdered sugar
    1/2 cup/125 mL Watkins Dessert Mix(Any flavor)
    1/4 cup/60 mL vegetable shortening
    1/3 cup/80 mL half-and-half
    Combine all ingredients in medium bowl and mix
    with electric mixer for about 2 minutes. Add more
    half-and-half or powdered sugar as needed for
    desired consistency.

    Makes enough to frost one 2-layer cake.

    Quick Banana Cream Pie



    Crust:
    Watkins Cooking Spray
    6 tbsp/90 mL butter or margarine
    1-1/2 cups/375 mL finely crushed vanilla wafers (about 35)
    1/4 tsp/2.5 mL Watkins Cinnamon

    Lightly spray a 9-inch/23-cm glass pie plate with
    cooking spray; set aside. Place butter in a mediumsized

    Add cookie crumbs and cinnamon; stir with a fork
    until blended. Press firmly and evenly over bottom
    and up sides of prepared pie plate. Microwave
    1 to 2 minutes or until set. Let chill before filling.

    Filling:
    1/2 cup/125 mL Watkins Banana Dessert Mix
    1/2 cup/125 mL sugar
    1/2 cup/125 mL water
    2-1/2 cups/625 mL milk
    2 slightly beaten egg yolks
    Combine all ingredients in large microwave-safe
    bowl. Microwave (HIGH), uncovered, for 7 to 12
    minutes or until mixture boils and thickens, stirring
    every 3 minutes. Quickly cool pudding by
    placing bowl in a larger bowl of ice water, stirring
    occasionally until cool.

    For Assembly:
    3 medium-size firm ripe bananas
    2 cups/500 mL sweetened whipped cream
    To assemble pie: Peel bananas, split lengthwise
    then slice into 1/2-inch/1-cm slices. Mix with
    1 cup/250 mL of the cooled pie filling. Spread
    on bottom of crust. Spread remaining pie filling
    on top. Refrigerate 3 hours or more. Decorate pie
    with whipped cream. Decorate if desired with
    sliced bananas, strawberries and toasted almonds.
